Sliced at 1/4 inch thick from the top round this steak has the same tenderness as a NY Strip steak with the delicious deep beefy flavor of the round. Just beware of overcooking it because there is so little fat in this cut that it can become dry and tough if over done.
Quality Control - All of our beef is USDA Choice or higher, dry-aged for 16 to 21 days for intense beefy flavor and buttery tenderness, and is hand carved by a master butcher at a family owned USDA processing facility. It is then vacuum sealed and flash frozen.
